First, mass attack a bit more. It's impossible to win if you don't attack.
As for how, I would say the indicated unit in this case would be the Ultralisk. All those Scourges are just useless against ground, and a sizeable group (12-24) of Ultralisks could tear through the Hydras, and the base. You'd want some Devourers/Scourges to ward off the Guardians he was building too, of course. Defilers to toss Dark Swarm around wouldn't hurt either.
Also, upgrading more would help a lot. You upgraded a bit at the beginning, then just stopped, while your enemy had full upgrades. That becomes a large disadvantage.
Another thing you could try is simply mass Mutalisks in that case. Mutalisks have some unique capabilities that are often under-realized. The most important is that they are small units, which means that a lot of attacks (including Hydras, Devourers, and almost all Protoss/Terran air units) do only half damage. Because of that, and because of the bouncing attack, Mutalisks in numbers can really shred Hydras. In terms of air opposition, he'd run out of Scourge long before you ran out of Mutas, trust me. Also important in that case, since he did have a lot of scourge etc. would be to continue producing mutalisks as you attack, so that you can send over a stream of reinforcements, or at least have an attack ready to follow it up very quickly.
Once you get into his base with mutas, there is one main thing you should immediately take out - all Spires. That will kill his ability to produce air units to fight you for a minimum of 2 minutes while he has to rebuild his Spire. In the middle of an attack, that can be crippling. The second obvious target would be the Hydra Den, destroying the entire ability to fight back. After that, go for the drones mining before switching to general destruction.Keep pumping mutas throughout, up to the control limit.
Against Protoss air, Ersadt pretty well nailed it. Zerg more than any other race have to rely on special abilities to defeat massive air attacks. Pack Hydras under a dark swarm, and you're untouchable, but can still pump out massive damage. Plague should be used on high hit point items - generally carriers. You might even consume a few Hydras in the middle to throw more swarms/plagues. Defilers are one of the best units in the game to counter an air attack, but not many players realize it.
