Is it possible to have a higher resolution than 640*480? (Eventually with an unoffical tool?)
Or is that the Coldstone maximum?

Yes,
In the menubar, select Game Options, then the Misc tab, under the game screen set of options, you will see the different choices.

The older iBooks and iMac's (I think) are limited to 800x600, if I remember correctly, this may impact your decision. I don't recall there being a choice in-game for screen resolution.

The problem with 640 is it looks like total crap on today's laptop screens. Also, higher resolutions don't necessarily require bigger graphics if you're thinking in relation PoG. PoG (and the Coldstone art lib) features truly enormous tiles and sprites, which makes it unnecessarily difficult (and annoying) to play. Using those same graphics, an 800x600 game should look pretty good. For my 800x600 game I'm even going with smaller tiles.
