I've just been fiddling about in Resedit, and I can't seem to find anything that assigns various pictures to the ships (e.g: Comm, shipyard etc) except for the sprite and the mask. Where's that stored and how can I change it?

Look in the EV/O Graphics file in your ev directory. a little way down there will be all the comm, shipyard, etc. PICTs

Yeah, but how can I tell resedit to assign various pictures in the PICT rsrc to various positions, like Comm and Shipyard or certain ships?
