Would it be possible to make a plug for Nova which extends the escort menu? You could have commands such as 'defend target ship'. Apparently in a beta of Nova there was a 'run away' command (for your freighters) which is what gave me this idea. I was wondering if anyone else knew because I'm still learning how to do all the new things which were added in Nova. Any ideas?

No, I'm afraid that's impossible. Adding new escort commands would require the engine to be modified - plugins are limited to changing the scenario.
