i've been up to the high galendrall ruins -- in search of both the "symbol" and the tome of elixers. i found the "symbol" -- but i can't find the tome. is it in the cave? or is that for some later quest?

Its in a cave thats in the top left corner of the area where the symbol is. Its a bitch without the proper equipment, so try to get a gate stone to teleport right after you get the book. Once in the cave, go east one screen, and there will be another opening to another level. Go down it and you'll find yourself in the cave with the tome. You'll know its the cave if there's lava. Go up, my suggestion being to run right past the minotaur-like creatures, seeing as how they did about 40-50 dmg to me when I had 83 armor. Its your call though. The book is right next to a chest. Like I said, bring a gate stone, even if it takes some time to get the guy who sells them to appear-it's definately worth it.

what's a gate stone? perhaps that's only in trinity, i'm playing PoG without the plug-in.

Yes, the gate stones only appear in trinity. They're very useful for getting back to places you've visited. I don't use them much though as my ranger's Earth Mole ability works just as well most of the time.
