It can't be done anymore but in 1.0.0 a Crecent Fighter with a Crescent Bay was quite funny.
(Buy three cargo pods, buy two mass expansions, sell the pods, buy a Fighter Bay).

I've flown that ship (Emalgha fighter w/Crescent fighter bay) too.

Any large freighter can be used as a carrier easily. My personal favourite would have to be a miranu freighter with crescent fighter bay, krait bay + zidigar/adzgari bay. I forget whether or not you can buy voinian fighter bays though.

You can't buy Zidagar fighter bays unless you change it with ResEdit (and I prefer sticking to ordinary EVO with no changes). But, an Arada with 2 Phase turrets, a CF bay and 3 Crescent Fighters is a pretty good ship, especially if you're gonna fight human Renegades or be one yourself.
