Download (url="http://"http://download.info.apple.com/Apple_Support_Area/Apple_Software_Updates/English-North_American/Macintosh/Utilities/ResEdit_2.1.3.sea.bin")ResEdit(/url) from Apple. (Note, very old application - but it runs just fine in OS 8, 9, and Classic.)
You will probably want to increase ResEdit's memory allocation via Get Info in the Finder. The default values are a little small these days. I find that 5 MB is about right.
Launch ResEdit and use it to open your compiled game.
Open the "vers" resource type, then open resource id 1.
Edit the information there.
Save changes and quit.
Note - ResEdit is somewhat crash-prone, and it has a nasty tendency to corrupt the file it was editing when it crashes. Since you can simply recompile your game if this happens, it's not as big a concern, but generally speaking, always make a backup of whatever file you're editing.
