Dougy, please, please, please don't use AIM-speak on this forum. Also, please don't use that many smileys. It's just obnoxious, and really kinda childish.
anyway, Uncle_Twitchy, use your f-curves for the banking frames. Just make them so they're constant (there are no inbetween degrees. It "jumps" from framed angle to the next.), and just render the ship through three rotations. Otherwise, make three renders, each at each bank position (straight, left, and right), and put them together after running them through sprites.
