I never found any of the EV Override ships awfully interesting - there's nothing to compare to a good Argosy, Corvette, Starbridge, or Dragon - but usually found the Arada - or in a pinch the Crescent Warship - to work well.

Arada before any major strings.
Then, Zidara or Igazra. The Zidara's low fuel capacity makes it hard to deal with enemies if you do not think. The Igazra is nice to just hold the primary and secondary key and see all the phase paricles (basic Igazra) heading towards these poor ships.
The Miranu Gunship is nice too. Also it has a nice story against evil renegates to help a peaceful country. The UE Cruiser is just too big on the screen and bulky.

You say that the UE Cruiser is too big and bulky, but even a long, thin ship actually occupies a square targeting point on screen. Presumably, in terms of 'catching' shots, the Igazra is just as bad whether it's head-on or broadside on.
Obscure thought:
All ships must be at their most likely to be struck by missiles when they are coming in from the corners of the screen, since you're displaying a frontage of 1.4142 times as much as when an incoming shot comes from one of the cardinal directions.
Or am I crazy?
I still like the Igazra the most, regardless, though taking on the universe in a souped-up freighter was huge fun in EV. There's nothing quite like the Argosy in EV:O.

I like the scoutship a lot when it's upgraded, the azdara is fun to fly but can't be used for any major mission strings because of the lack of cargo space.

When it actual comes to impact, the shape of the mask comes to effect.

A UE Cruiser decked out with Neutron Turrets is by far is the best ship I can destroy an Igadzra and can then destroy another one.
