Although it's a long time ago I've played EV:O I do remember my ship's name: Gay Deceiver II (a scoutship). Named after the famous ship in Robert A. Heinlein's 'Number of the Beast' book.
It was the second ship of that name and I stuck with it.W.

Triton Corsair? Well, I got the name Corsair from the fighter/bomber that served over the Pacific seas in World War II, (A-7 Corsair? I don't remember...) and Triton has always been one of my favorite names, besides Antares. (I think they are both star names) I used to also call my ship the U.E.S. Anataris.

I name my carriers Concordia, New Taranto, Tiger's Claw and Eagle's Talon. Destroyers I name after planets or scientists or just a random thought (Momsen, Rickover, Jupiter, Devastator, Mach) and cruisers something big and bad, or where my loyalties inwardly lie (Huron, Freeport, Napalm, Freedom). I named my Lazira Ugly Duckling (face it the paintjob IS) and my scoutship Adventurer.
(Yeah I know that some names ARE from Wing Commander. I like that game a lot.)
