This is how you do it:

Using the tab key selects the different ships in the system, but doesn't select your escorts (to avoid you accidentally firing on them I suppose).

So, you use the tab key with the "Option" key depressed, which does scroll through your escort ships. When one is selected, open communications ("Y" key) and choose "Release from servitude". Do this for as many escorts as you have, and they will be released, and you will be free of them.
