The way I do it:
1. Get a decent ship, arm it with a rocket launcher.
2. Disable all little Voinian whatevers (don't kill any)
3. Wait for others to kill the Voinian frigates and die. 
4. Shoot Dreadghnout with all your rockets.
5. Reload rockets from disabled little whatevers.
6. Repeat 4. and 5. as many times as necessary.
I destroyed the Dreadnought in my UE Destroyer and here's how:
Ditched the blaze guns and got 3 Neutron turrets. Got 4 Shield Enhancers and Dospect Armor.
Jumped into the system, destroyed the fighters.
Flew on over to the Dreadnought which was being attacked by the other 4 Destroyers.
Let all hell loose
That was it, there were no other Voinian ships in the system, so that made it easier, I didn't use any other weapon other than the Neutron turrets, no rockets, nothing.

Anyway to get bak to the topic, I've upgraded out of my Freight courier and into a UE destroyer. I outfitted it with Dospect armor, Neutron turrets and two rocket launchers with 15 rockets, along with all the usual stuff I could fit.
Beating the dreadnought with this configuration wasn't to chalenging. First I got a destroy Voinian task force mission in the same system to increase the odds a bit. Then I just used a few rockets to quickly dispatch all the intereceptors. After that the Dreadnought was a sitting duck since the AI in EVO 1.0.2 seems scared to fire its neutron turrets and intead keep trying to turn and get you with rockets, even if you are right up close. A minute of Monty Pythoning when my armor got low and it was all over.

look, UE destroyers and carriers suck a$$ extremely so shaddup about them, and the way to kill the dreadnought is ta get an Igazra and just boost it up with as many SAE modules and launchers as possible. ya never get touched once
i used a UE destroyer since it can hold 5 guns and 5 turrets. also, the turret focus (area of fire) is very accurate in a way that every shot is lined up behind another. none of this crappy "long wall of innaccurate fire." then i load it up with upgrades BLAH BLAH BLAH (no escorts) and load it up with emalghan turrets and guns. FIRE AWAY boooom. hehe

I just use a plugin with a custom ship. They are usually more powerful than the others, and you can sorta cheat on the price by editing it and that makes it easier. It's annoying for a while when you have no cash so just make the price only a few credits or even 0 credits. Some may say "that's cheating", but I think it's more fun.
