When you go back to the thread's page and find your post, there's a row of icons along the top of it. Click on the Edit one.

Similarly, when you want to reply to a post, find it and click the Reply button in the row of icons above that post. It will include that post as a quote in the text box when you reply. Otherwise, if you just want to make a normal reaply without a quote, just click on Post Reply at the top or bottom of the page.

When you look at the reply field, you'll see that the original quote from clicking on the Reply icon above the post is surrounded in ( QUOTE)( B)stuff stuff stuff( /B)( /QUOTE)
Of course, they don't have the leading space between the ( and the tag name, I just did that so they would show up in the message.
Just add those around whatever you want to quote in your messages and you'll have no troubles.
