Hm, depending on what aspect of EV you're looking at... Prior to EV (Mac OS, 1996) there were many games:
Star Control 2 (DOS, 1992) was mentioned earlier; it features 2-player ship melee in a rpg-ish story. It's a love-it-or-hate-it game, though: you have to collect minerals to "buy" upgrades- some find it tedious, others enjoy the pacing- so it depends on your cuppa. The 3DO port of SC2 is being ported back into Windows and goes under the moniker "The Ur-quan Masters" due to some copyright issues.
Star Control TimeWarp (http://sf.net/projects/timewarp) is a fan-made SC2 "clone" for Windows, but it's a work-in-progress; it features a revamped ship melee engine with lots of new ships, but does not currently have a full story like SC2.
Wing Commander: Privateer (DOS, 1993) would probably be right up your alley. It's pretty much like EV (mission computers, commodity trading, pirates, upgrading, even EV's plot shared some similarities to Privateer's), except in 3d and a first person view. It was a lot of fun in its day, with speech and such, but nowadays, the graphics are noticeably dated. There was also an expansion (Righteous Fire) and a sequel (Privateer 2, duh), but the sequel, as I understand it, mucked some things up, like forcing you to fight enemies even when you could run away.
Solar Winds 1 and 2 (DOS, 1992) by Epic Megagames was a shareware (might be freeware now) rpg-ish game that is similar to SC2, but not as good. The story never gets finished (there were supposed to be more sequels, I guess), and the gameplay just isn't as good.
The original game in the merchant/mercenary genre is Elite (1984) for the BBC Microcomputer (released on disk and tape ;)!). It was ported widely, and still enjoys a popular following today. It featured trading, pirates, and upgrades, and was set in a 3d first person view (amazing at the time). Depending on the port, features were added or left out, due to computer limitations. Some versions contained the ability to buy new ships and missions, though the missions were semi-random (i.e. there is no bar or mission computer), but they added spice to the game. Also, the kill-rating system (Harmless, Mostly Harmless, Competent, Dangerous, Elite (I'm forgetting some)) is echoed in the original EV. There were features that aren't even in EV (fuel scoops regenerate fuel when close to suns and can pick up cargo and metal debris from destroyed ships and asteroids), but you can't board ships. Probably the most difficult thing about Elite is landing... you have to land inside a rotating space station. You get used to it, but only after crashing a lot. It's prudent to buy a docking computer when you can; it'll save you lots of trouble.
A Windows port using VGA graphics was made called Elite Plus. Also, there were sequels, Frontier and Frontier: First Encounters. The sequels were a bit buggy last I checked (that was years ago), but as I understand it, patches have been made that dramatically improve the gaming experience (i.e. fewer crashes/ broken missions). You can pretty much find and download any of the Elite's by using a search engine.
Sorry, I don't have many links; it's been a while since I've played any of these :p. I also don't know many of the more recent games- my PC just doesn't have the power to run the more modern ones...

I am in no way endorsing this, but was wondering how it compared to EV?
After hearing the horrid stories about it in the (url="http://"http://www.eve-online.com")EVE(/url) forums I decided not to join the beta. But considering both these games are for PeeC it's best not to metion them here.
